Almond Butter Espresso Protein Cookies

✔️¾ Cup Creamy Almond Butter

✔️¾ Cup of Swerve Classic Granular Sweetener

✔️1 Scoop of Thrive Elite Vanilla Protein

✔️1 TBSP Finely Ground Espresso

✔️1 TSP Baking Soda

✔️½ TSP Vanilla Extract

✔️1 Egg





1. Preheat oven to 350°F degrees. Spray your cookie sheet with olive, avocado, or coconut oil.

2. Use a large bowl to mix almond butter & sugar. Then add egg, espresso, Vanilla Protein, baking soda, and vanilla extract. Mix until combined.

3. Use a cookie scoop or spoon to place cookie dough on the baking sheet. Cookies will spread!

4. Bake for 10-12 minutes. Allow cooling for 3-5 minutes on the cookie sheet before gently transferring cookies from the sheet to a cooling rack with a spatula.
