So, because it’s all pumpkin all the time I’ve created this super healthy and easy to make pumpkin pod with chia seeds.

This is the perfect breakfast, snack or anytime pumpkin fix for you and your kids.

Thrive Pumpkin Pods are packed with healthy nutrients, plenty of protein and of course they taste like the pumpkin pie your mom used to make for the holidays.

Plus, I added Chia Seeds because they’re awesome for you. Chia seeds have tons of fiber, so it will keep you full for hours. And beyond the fiber, this pudding offers protein, antioxidants, omega-3 fatty acids, and calcium.

Thrive Pumpkin Pods with Chia Seed

Ingredients
:
1 cup unsweetened almond milk
1/2 cup canned full-fat coconut milk
1/2 teaspoon pure vanilla

1/2 teaspoon ground cinnamon
1/4 cup chia seeds
1 scoop of Vanilla sfh Pure Whey
1 cup pumpkin puree
1 tablespoon coconut nectar (optional)
Stevia added to taste

Topping suggestions:
Toasted coconut
Toasted pecans

Directions:

1. In a medium bowl whisk together almond milk, 1/2 cup coconut milk, liquid stevia, vanilla, protein powder, coconut nectar and cinnamon. Add chia seeds; whisk to combine.
2. Let stand at room temperature for 20 minutes, whisking occasionally to distribute chia seeds.
3. Once the chia seeds have absorbed the liquid and the mixture has thickened, spoon the chia pudding into four small glasses. Cover and refrigerate at least 1 hour to thicken the pods.

(The pods can be stored in the fridge up to 2 days.)
