Cinnamon Crumble Muffins🧁

 

There’s no better way to kick off the holiday weekend festivities than with some delicious cinnamon crumble greatness🙌🏻 (The top layer will leave you feeling 🤤)

 

Here’s what you’ll need:

 

✳️ Ingredients:

 MUFFIN BASE:

-4 Eggs 

-2 Cups Almond Flour 

-1 Scoop of Thrive Vanilla Protein

-1/3 Cup Maple Syrup (we used Lakanto’s Maple Syrup)

-1 TSP Vanilla 

-3 TSP Cinnamon 

-2 TBSP of Butter (or Ghee)

-2 TSP Baking Powder 

-2 TBSP Nut Butter

 

CINNAMON CRUMBLE: 

-1/2 Cup of Swerve Brown Sugar

-2 TBSP of Cinnamon

-2 TBSP of Butter

 

VANILLA PROTEIN ICING:

-1/3 Cup of Swerve Confectioners Sugar

-1 Scoop of Thrive Vanilla Protein

-2 TBSP of Almond Milk

 

❇️ Directions:

1️⃣ In a bowl, whisk the eggs, then add the rest of the muffin ingredients in and mix well. 

2️⃣Scoop batter into muffin tin (only fill halfway)

3️⃣In a small bowl, mix the Cinnamon crumble layer together. 

4️⃣Add 1/2 of the Cinnamon Crumble mixture to the batter. 

5️⃣Then add the rest of the batter on top. 

6️⃣Drizzle the remaining Cinnamon Crumble on top. 

7️⃣Bake at 350F for 20-25 minutes. 

8️⃣Let cool completely, then drizzle Vanilla Protein Icing on top! 

 

Pair with an iced coffee, and ENJOY 🙂
