Let’s dive into three mouth-watering, protein-packed recipes that will keep you on track this summer. 💪🏻

 

BBQ CHICKEN KABOBS🍗

 

Ingredients

  • 2 TBS of Avocado Oil (or EVOO)
  • 3 Cloves of Minced Garlic
  • 1 Diced Onion
  • 1 1/2 Cup of Primal Kitchen Golden BBQ Sauce
  • 3 TBS Dijon Mustard
  • 1 TSP Black Pepper
  • 1/2 TSP Ground Ginger
  • 2 LBS Boneless, Skinless Chicken Breast, diced into kabob chunks

 

Instructions

  1. Heat up Oil in a small saucepan over medium-low heat. Add in the Garlic and Onion, stirring occasionally. Cook for 3-4 minutes
  2. Add Primal Kitchen Golden BBQ Sauce, Mustard, Pepper, and Ginger. Again, stir occasionally for about 5 minutes. So much flavor! After, let it cool.
  3. In a separate bowl, combine the sauce and the chicken chunks. (let it sit for a couple of hours.) **FOR THE BEST FLAVOR, LET IT SIT OVERNIGHT IN THE FRIDGE**
  4. Preheat Grill to Med-High Heat. Thread the chunks on to skewers.
  5. Throw the skewers onto the grill for about 10-15 minutes.
  6. Add on extra BBQ sauce mixture & ENJOY!

 

PROTEIN TWIX COOKIES🍪

 

Ingredients

SHORTBREAD LAYER:

  • 1 Cup Almond Flour (SUB: Coconut flour)
  • 1 Scoop of Thrive Elite Vanilla Protein
  • 1/4 Cup Coconut Oil
  • 1 TSP of Vanilla Extract
  • 3 TBSP of Lakanto Maple Syrup (sugar-free, monk fruit syrup)
  • 1/8 TSP of Salt

CARAMEL LAYER:

  • 1/2 Cup Cashew Butter (SUB: for your fave nut or seed butter)
  • 1/4 Cup Coconut Oil
  • 1 TSP Vanilla Extract
  • 1/4 Cup Lakanto Maple Syrup (sugar-free, monk fruit syrup)
  • Dash of salt

CHOCOLATE LAYER:

  • 1/2 Cup Of Lily’s Dark Chocolate Chips
  • 1 TBSP of Coconut Oil

Instructions

SHORTBREAD LAYER:

  1. Preheat oven to 350 degrees F.
  2. Combine all ingredients. Line a cookie sheet with parchment paper and use a cookie scooper to scoop each cookie.
  3. Flatten each cookie before baking.
  4. Bake for 10-12 minutes, or until starting to turn golden brown. Remove once done and let cool completely.

CARAMEL LAYER:

  1. Combine cashew butter, coconut oil, vanilla, Lakanto maple syrup, and salt in a saucepan over the stove on medium-low heat and heat until completely liquified, whisking together, about 2-3 minutes.
  2. Remove from burner and let cool completely.

CHOCOLATE LAYER:

  1. Melt chocolate and coconut oil in microwave until fully melted, stir occasionally.

TWIX COOKIES:

  1. Once shortbread & caramel have completely cooled, pour caramel sauce over each shortbread cookie. Then let it cool in the refrigerator for 2-3 hours.
  2. Remove from refrigerator and pour chocolate over the top, spreading out evenly. Sprinkle salt on top (optional)
  3. Once it’s chilled, then remove from the baking and ENJOY!

 

ALL DRUNK, NO JUNK MARGARITA🍹

 

Ingredients:

  • 2 Ounces of Tequila (make sure you use quality tequila or vodka)
  • 6 Ounces of Club Soda (or any soda water ~ we used a Lemon La Croix)
  • The Juice of 1 Lime (use a citrus press)
  • The Juice of 1⁄2 a Lemon (use a citrus press)
